Menu: India celebrates Independence Day on August 15 each year. India became an independent nation on August 15, 1947, so a gazetted holiday is held annually to remember this date. As it is a holiday, people tend to indulge on some delicious delicacies and prepare something special. Try out churning a meal this time with the colours of Independence – Khumb Hara Dhania, Aloo Paneer and Broccoli Makhni and Lychees Stuffed with Kesari Mawa.

Shopping list

2 packets button mushrooms
100 grams cashew nuts
250 grams baby potatoes
200 grams cottage cheese
1 small broccoli
1 bottle crushed red chillies
1 small bottle honey
100 grams butter
1 small packet fresh cream
20 pieces canned lychees
½ gram saffron
200 grams mawa
100 grams pistachios

For faster preparation
Prepare the boiled onion and cashewnuts paste for khumb hara dhania. Chop the coriander and green chillies. Boil and peel the baby potatoes for makhni. Blanch the broccoli. Chop the pistachios for the dessert.

How to go about it
Prepare the khoya mixture and butter caramel sauce for the dessert and stuff the lychees. Finish the khumb hara dhania and makhni. Serve the dessert with the sauce.
