Alur Dum By Sanjeev Kapoor 28 Nov 2014 in Recipes Course New Update Main Ingredients Potatoes, Tomatoes Cuisine Fusion Course Main Course-Veg Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Select Taste Level of Cooking Medium Others Veg Advertisment Ingredients list for Alur Dum 500 grams Potatoes halved, parboiled 2 medium Tomatoes cut into small cubes 3-4 teaspoons Oil 3-4 Green cardamom 2 inch Cinnamon stick 2-3 Bay leaves 1-2 Dried red chillies 1/2 teaspoon Red chilli powder 1/2 tablespoon Sugar 1 1/2 tablespoons Turmeric powder 1 teaspoon Cumin powder to taste Salt 1 1/2 teaspoons Ginger paste 1/2 cup Yogurt 3-4 tablespoons Cashewnut paste 3-4 Green chillies to taste Crushed black peppercorns Method Heat oil in a non-stick pan, add green cardamom, cinnamon, bay leaves, dried red chilli, chilli powder, sugar and mix well. Add potatoes and mix to toss. Add turmeric powder, cumin powder, salt, ginger paste, yogurt, and cashewnuts to the pan and mix well. Add tomato and green chilli and 1 cup water and mix well. Cook till the potatoes are completely cooked. Add black peppercorns and salt and mix well. Simmer for a minute.
