  • Prawns shelled and deveined

  • Soy sauce
    1 teaspoon
  • Salt
    to taste
  • Crushed red chillies
    1/2 teaspoon
  • Honey
    2 teaspoons

Method

Step 1


Skew a green grape on each satay stick. Wrap a prawn around a black grape and skew onto the satay sticks after the green grape and end with another green grape.

Step 2


Heat olive oil in a non-stick pan. Halve the remaining black grapes and puree them in a blender. Transfer the puree into a bowl, add soy sauce, salt and crushed red chillies and mix well.

Step 3


Keep the satay sticks in the pan and cook, rotating the sticks for even cooking all around.

Step 4


Sprinkle a little salt over them and cook till just done. Remove and place them in a serving dish.

Step 5


Put the grape mixture into the pan and cook. Add honey and mix. Squeeze the juice of lemon into the sauce and mix.

Step 6


Strain the sauce through a sieve into a small bowl, squeezing the residue to extract all the flavours.

Step 7


Drizzle the sauce over the prawns and serve hot.
