Chop the onion.
Heat oil in a non-stick pan. Remove the crown from the roasted brinjal and finely chop it. Keep aside the crown.
Add cumin seeds and chopped onion to the pan. Sauté till onion is light brown.
Add tomatoes and mix well. Add salt and mix well.
Add the brinjal crown and mix again.Drain the soya granules and add. Mix well.
Add chopped roasted brinjal and mix well.
Add red chilli powder, mix and cook for 3-4 minutes. Serve hot.
