Broccoli Mushroom and Penne Bake Penne baked in white sauce with broccoli and mushrooms. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 10 Jun 2016 in Recipes Course New Update Main Ingredients Broccoli, Button Mushrooms Cuisine Fusion Course Noodles and Pastas Prep Time 11-15 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Broccoli Mushroom and Penne Bake 1 small Broccoli separated into small florets 8-10 Button Mushrooms quartered 100 grams Penne boiled 2 tablespoons Butter 1 medium Onion chopped 2 teaspoons Garlic chopped 1 tablespoon Refined flour (maida) 3/4 cup Milk to taste Salt 2 teaspoons Red chilli flakes to taste Crushed black peppercorns 1/3 cup Fresh cream 4 tablespoons Grated processed cheese 1 tablespoon Parmesan cheese powder 3 tablespoons Grated mozzarella cheese Method Preheat the oven to 200º C. Heat butter in a non-stick pan, add onion and garlic and saute till onion becomes translucent. Add refined flour, mix and saute for a couple of minutes taking care that the colour of the flour does not change. Add milk and mix. Add broccoli and mix well. Add mushrooms, mix well and cook for two minutes. Add penne and mix well. Add salt, chilli flakes and crushed peppercorns, mix well and cook for a minute. Add cream and mix well. Add processed cheese and Parmesan cheese, mix well and let it get heated through. Spread cooked pasta mixture in a glass baking dish, top with mozzarella cheese, place the dish in the preheated oven and bake for seven to eight minutes or till the cheese melts. Serve hot.
