Laganshaala Spicy Parsi style vegetable soup This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 17 Dec 2015 in Recipes Course New Update Main Ingredients Sweet potato, Carrot Cuisine Parsi Course Soups Prep Time 0-5 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Laganshaala 3-4 medium Sweet potato cubed 2 medium Carrot 2 small Carrots cubed 1/2 medium Cauliflower 2 medium Tomatoes quartered 2 tablespoons Oil 1 teaspoon Cumin seeds 2-3 Whole dry red chillies broken 2 medium Onions sliced 1 teaspoon Garlic sliced 2-3 Green chillies slit to taste Salt 1 tablespoon Worcestershire sauce 1 teaspoon Vinegar 1 teaspoon Sugar Method Heat oil in a thick-bottomed pan and add cumin and red chillies. When they begin to change colour add onions and sauté on medium heat for two minutes or till pink. Add garlic and green chillies and sauté further for a minute. Add potatoes, sweet potatoes, carrots, cauliflower, tomatoes and salt along with two to three cups of water and cover and cook on low heat till almost done. Add Worcestershire sauce, vinegar and sugar, stir and cook for another five to ten minutes till vegetables are done and water is reduced to less than half. Serve hot.
