Ingredients list for Lemon and Pumpkin Rice

  • 1 1/2 cups Lemon Juice soaked for an hour
  • 2 teaspoons Basmati Rice
  • 1 Lemon
  • 250 grams Red pumpkin peeled
  • to taste Salt
  • 2 tablespoons Ghee
  • 1 medium Onion
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 2-3 Green chillies
  • 1 cup Coconut milk

  1. Heat ghee in a non-stick pan. Slice onion.
  2. Add cumin seeds and mustard seeds to the pan and let them splutter. Add onion and sauté till translucent.
  3. Cut pumpkin into 1 inch cubes and add to the pan. Add salt and mix well. Cover and cook for 4-5 minutes.
  4. Slit green chillies without cutting through and add to the pan. Cover and cook on high heat till the pumpkin changes colour. Add coconut milk and 2 cups water and mix well.
  5. Add drained basmati rice and bring it to a boil. Cut the lemon half into 4 pieces and add to the pan. Add lemon juice and mix well. Cover and cook till the rice is done.
  6. Transfer onto a serving plate and serve hot.
