This recipe is from FoodFood TV channel By Sanjeev Kapoor 19 Jul 2021 in Recipes Course New Update Main Ingredients Red carrots, Dried red chiliies Cuisine Indian Course Pickles, Jams and Chutneys Prep Time 16-20 minutes Cook time 6-10 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Low Calorie Carrot Pickle 2 large Red carrots , peeled and thickly grated 10-12 Dried red chiliies ¼ cup + ½ teaspoon Mustard seeds 2 tablespoons Oil 1/4 teaspoon Fenugreek seeds (methi dana) 1/4 teaspoon Asafoetida to taste Salt 1 large Lemon Method Put red chillies in a grinder jar, add ¼ cup mustard seeds and grind. Heat oil in a pan, add ½ tsp mustard seeds, fenugreek seeds and asafoetida and saute till the seeds splutter. Add carrots and mix well. Add salt and mix. Switch off heat. Add 2 tbsps of the ground mixture and mix well. Squeeze juice of ½ lemon and mix. Cool and store in a bottle. After a day keep it in the refrigerator. It will keep upto 2 weeks. Serve.
