Ingredients list for MBPS pulao

  • 3 cups Cooked basmati rice
  • 1 1/2 cups Mushrooms quartered
  • 1 cup Paneer (cottage cheese) cubed fried
  • 1/2 cup Green peas boiled
  • 1/2 cup Spinach leaves (palak) chopped
  • 6 Cloves
  • 6 Green cardamoms
  • 2 inch stick Cinnamon
  • 2 tablespoons Fennel seeds (saunf)
  • 4 tablespoons Ghee
  • 2 Bay leaves
  • 3 medium Onions chopped
  • 1/2 cup Spring onion greens chopped
  • 3 tablespoons Ginger-garlic paste
  • 3 Green chillies chopped
  • to taste Salt
  • 1/2 cup Coconut milk
  • for garnish coriander leaves

Method

  1. In a blender; blend cloves, green cardamoms, and cinnamon and fennel seeds to a fine powder. Set aside.
  2. Eat ghee in a non stick pan, add bay leaves, onion and sauté till pink. Add spring onions, ginger garlic paste and green chillies. Sauté for two minutes.
  3. Add the above spice powder and mix for two minutes. Add mushrooms and sauté for two minutes. Sprinkle two tablespoons water. Toss well.
  4. Add baby corn, cottage cheese, green peas, spinach leaves, rice and salt. Mix well. Add coconut milk and cook for five minutes. Garnish with coriander leaves and serve hot.
