By Sanjeev Kapoor 17 Nov 2014 in Recipes Course New Update Main Ingredients Eggs, Spinach Cuisine Mangalorean Course Main Course Egg Prep Time 6-10 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Manglorean Egg Curry 4 Eggs boiled and peeled 1 tablespoon Spinach 2 teaspoons Ginger paste 4 teaspoons Garlic paste 2 medium Onion finely chopped 1 large Tomato finely chopped 1 teaspoon Kashmiri red chilli powder 1/4 teaspoon Turmeric powder 1 teaspoon Cumin powder 2 teaspoons Coriander powder to taste Salt 2 medium Spinach blanched and pureed bunches 1/4 cup Fresh cream Method Heat oil in a non stick pan. Add ginger paste, garlic paste and sauté for half minute. Add onions and sauté till golden brown. Add tomatoes and sauté till oil separates. Add red chilli powder, turmeric powder, cumin powder, coriander powder and mix well. Add two cups water and mix well. Add salt. Once the water comes to a boil, add spinach puree and mix well. Cook for two minutes. Add fresh cream and mix well. Halve the eggs vertically and add to the gravy. Mix lightly and cook for two minutes.
