Mix together mustard powder, ground turmeric, ginger paste, cornflour and half the quantity of white wine vinegar. Boil the remaining vinegar in another non-stick pan, add the above mixture and cook for three to four minutes or until the mixture thickens. Remove from heat and add the melon cubes along with sugar syrup. Allow to cool down to room temperature. Store in a clean jar, seal immediately.
