Ingredients list for Prawn Baingan Masala

  • 500 grams Prawns shelled and deveined
  • 1 medium Brinjals roasted and peeled
  • 2 tablespoons Oil
  • 1 teaspoon Onion seeds (kalonji)
  • 4 Green chillies finely chopped
  • 1 tablespoon Ginger finely chopped
  • 1 tablespoon Garlic finely chopped
  • 2 medium Onions
  • 2 medium Red tomatoes
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 100 grams Bhuna masala
  • 2 tablespoons fresh coriander leaves + a fresh coriander sprig finely chopped

  1. Heat oil in a non-stick pan. Add onion seeds, green chillies, ginger, garlic and sauté for half a minute.
  2. Finely chop onions, add to the pan and sauté for 3-4 minutes.
  3. Finely chop roasted brinjal and tomatoes. Add tomatoes to the pan and mix well.
  4. Add red chilli powder, turmeric powder and salt and mix well. Sauté for 4-5 minutes.
  5. Add bhuna masala, mix well and sauté for 2-3 minutes.
  6. Add prawns, mix well and cook for 2-3 minutes.
  7. Add brinjal, coriander leaves, mix well and cook for 1-2 minutes.
  8. Transfer into a serving bowl, garnish with a fresh coriander sprig and serve hot.
