Ingredients list for Roasted Medley On Skewers

  • 5-6 Button Mushrooms
  • 2 medium Pineapple cubed
  • 1 medium Green capsicum cubed
  • 1 medium Yellow bell pepper cubed
  • 1/2 small Pineapple cubed
  • 1 medium Apple cubed
  • 1 medium Pear cubed
  • 4 Spring onion bulb
  • 2 teaspoons Tomatoes, cubed
  • 4-5 tablespoons Mint chutney
  • to taste Salt
  • 2 tablespoons Lemon juice
  • 1 tablespoon Sugar
  • 1 tablespoon Oil
  • 1 tablespoon Butter

  1. In a bowl mix mint chutney, salt, lemon juice, sugar and oil.
  2. Add all the prepared fruits and vegetables and marinate for at least one hour.
  3. Preheat the barbecue.Thread the pineapple, onion, capsicum, tomato, mushroom, apple, spring onion, yellow pepper, pear and onion on skewers.
  4. Arrange the skewers on the barbecue and cook till well roasted. In between baste with butter. Serve hot.
