Ingredients list for Salmon in Coconut Sauce

  • 1 Thick salmon steak
  • 1 cup Thick coconut milk
  • 4 tablespoons Oil
  • 1 Medium onion chopped
  • to taste Salt
  • a pinch Garam masala powder
  • 3 tablespoons Lemon juice
  • 1 Large tomato chopped
  • 1/4 teaspoon Red chilli powder
  • 1/4 teaspo to sprinkle Paprika powder
  • 1/4 teaspoon Turmeric powder
  • 1/4 teaspoon Crushed fresh green chillies
  • 2 tablespoons Potato boiled, peeled and mashed
  • 2 tablespoons Spring onion greens chopped

Method

  1. Heat 2 tablespoons oil in a non-stick pan, add onions and saute.
  2. Keep the salmon steak on a plate and sprinkle salt and garam masala powder and pour lemon juice.
  3. When the onion is lightly coloured add tomato, mix and saute for 2 minutes.
  4. Add red chilli powder, paprika powder and turmeric powder, mix and saute for 2 minutes.
  5. Add crushed green chillies and thick coconut milk and mix. Add mashed potatoes and mix well and saute for 2 minutes.
  6. Add salt and mix well. Take the pan off the heat.
  7. Heat the remaining oil in another pan, add the salmon steak, skin side down, cover with the pan with the sauce and cook.
  8. Add spring onion greens to the sauce and mix.
  9. When the underside of the salmon steak is done, gently flip it over and cook the other side.
  10. Spread some of the sauce in a serving plate, place the salmon steak over the sauce, sprinkle some paprika powder all around and serve hot.
