By Sanjeev Kapoor 15 Feb 2016 in Recipes Course New Update Main Ingredients Potaoes, Yogurt Cuisine Maharashtrian Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Ambat Batata 5-6 medium Potaoes boiled and peeled 1/2 cup Yogurt whisked 1/2 teaspoon Mustard seeds 1 teaspoon Cumin seeds 6-7 Curry leaves 3 Green chillies finely chopped 3 medium Onions finely chopped 1/2 teaspoon Turmeric powder 3 tablespoons Oil 4-5 Kokum petals 1/4 medium bunch Fresh coriander leaves finely chopped 1/4 cup Scraped coconut to taste Salt 2 teaspoons Lemon juice Method Advertisment Halve each potato and further cut each half into four equal pieces. Heat the oil in a non stick pan. Add the mustard seeds. When they splutter, add the cumin seeds and sauté briefly. Add the curry leaves, green chillies and stir. Immediately add the onions and sauté till golden brown in colour. Add the turmeric powder, potato cubes and stir-fry for one to two minutes. Stir in the yogurt, kokum pieces, half the coriander leaves and half the coconut, salt and lemon juice. Reduce heat and simmer for one to two minutes.
