By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Semolina, Sugar Cuisine Fusion Course Desserts Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Casari 1 cup Semolina 7 tablespoons Sugar a few strands Saffron (kesar) 2 Green cardamoms 7 tablespoons Ghee 10-12 Cashewnuts,quartered a pinch Salt 1/2 cup Milk 10 Sultanas 1 tablespoon Butter 10 Almonds,blanched and slivered Method Combine sugar and one and a quarter cups of hot water in a pan over low heat, stirring until the syrup gets a golden colour. Remove from heat and keep aside. Soak saffron strands in a tablespoon of hot water. Remove the seeds from the cardamom pods and discard the pods. Heat ghee in a kadai and fry cashewnuts till golden. Drain and keep aside. Fry semolina in the same ghee until brown. Add the sugar syrup, salt, milk, cardamom seeds, sultanas, fried cashewnuts and soaked saffron and mix well. Cook over low heat till mixture thickens. Grease a dish with butter. Spread mixture on the greased dish. Leave it to cool. Garnish with almonds. Cut into desired shapes and serve.
