Cut cauliflower vertically into thick slices/steaks.
Finely chop ginger.
Heat 2 tbsps in each of 2 separate non-stick pans.
Mix salt and pepper powder with refined flour in a bowl.
Sprinkle salt on cauliflower slices/steaks.
Add onions, garlic and ginger to one pan and sauté till golden.
Coat cauliflower slices/steaks with the flour mixture, dust off excess and place in the second pan.
Cover and cook till the underside is golden brown.
Add both the tomato purees to the onions in the first pan, mix well and cook for 2 minutes.
Flip the cauliflower slice/steak, cover and cook till the other side is golden brown.
Roughly chop jalapeno slices and add to the first pan, mix well and add salt.
Mix again and add 2-3 tbsps water.
Stir to mix and cook for 2-3 minutes.
Add the masala from the first pan to the cauliflower, cover and cook till done.Chop coriander leaves and add.
Mix well and cook for 1-2 minutes.
Garnish with a mint sprig and serve hot.
