  • 1 1/2 cups Castor sugar (caster sugar)
  • 6 tablespoons Cornflour/ corn starch
  • 4 1/2 cups Milk
  • 3 Egg yolks
  • 6 tablespoons Unsalted butter
  • 1 tablespoon Instant coffee powder
  • a few drops Vanilla essence
  • 2 tablespoons Cocoa powder
  • for garnish Whipped cream

  1. To make the coffee layer place half cup of sugar and two tablespoons of cornflour in a thick bottomed pan. Gradually whisk one and a half cups of milk and one egg yolk and cook on medium heat for a minute stirring all the time till well blended..
  2. Remove the pan from heat, add two tablespoons of butter and instant coffee and mix well. Allow to cool. Divide the coffee mixture among six glasses and allow to set. To make the vanilla layer, place half of the remaining sugar and cornflour in a heavy based saucepan, whisk in 1 ½ cups of milk and an egg yolk and bring to a boil.
  3. Lower heat and cook for a minute. Remove the pan from heat, stir in two tablespoons of butter and the vanilla and allow to cool. Spoon the vanilla mixture on top of the coffee layer and allow to set. To make the chocolate mixture place the remaining sugar and cornflour in a heavy based saucepan, gradually whisk in the remaining milk and the last egg yolk and cook on medium heat stirring until well blended..
  4. Remove the pan from heat, stir in the remaining butter and cocoa powder and allow to cool. Spoon the chocolate mixture on top of the vanilla layer and chill until set. Pipe swirls of whipped cream on top of each dessert just before serving.
