Ingredients

  • Green zucchini sliced vertically
    1 medium
  • Yellow Zucchini sliced vertically
    1 medium
  • Paneer (cottage cheese) grated
    1/2 cup
  • Salt
    to taste
  • Oil
    for grilli
  • Walnuts chopped
    1/4 cup
  • Parmesan cheese grated
    2 tablespoons
  • Crushed black peppercorns
    1/4 teaspoon
  • Lemon rind grated
    1/4 teaspoon
  • Lemon juice
    2 tablespoons
  • Fresh mint leaves chopped
    a few

Method

Step 1


Add salt to zucchini slices and set aside for 5-7 minutes. Place slices on a griller and drizzle little oil on top. Cover and grill on both sides for 2-3 minutes. Remove from heat and cool down to room temperature.

Step 2


Mix cottage cheese, walnuts, cheese, crushed peppercorns, salt, lemon rind, lemon juice and mint leaves well in a bowl. Place grilled zucchini slices on worktop.

Step 3


Place some cottage cheese mixture on one side of each and roll tightly. Serve immediately.
