This recipe is from FoodFood TV channel By Sanjeev Kapoor 08 Mar 2019 in Recipes Course New Update Main Ingredients Lemon juice , Basmati rice Cuisine Indian Course Rice Prep Time 31-40 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Lemon Rice With Vegetables 2 tablespoons Lemon juice 1 1/2 cups Basmati rice soaked 1/2 small Cauliflower separated into small florets 1 medium Carrot grated 3 tablespoons Olive oil 1 teaspoon Split Bengal gram (chana dal) 1 teaspoon Split black gram skinless (dhuli urad dal) 1/4 teaspoon Fenugreek seeds (methi dana) 1 teaspoon Mustard seeds 2 Dried red chillies broken 2 tablespoons Coconut scraped 10-12 Curry leaves to taste Salt 1/2 teaspoon Turmeric powder 20-25 Stuffed green olives 1 Lemon Method Heat olive oil in a large non stick pan. Add split Bengal gram, split black gram, fenugreek seeds, mustard seeds, red chillies and coconut and saute till fragrant. Add curry leaves and mix. Add cauliflower and carrot and mix. Drain and add rice along with salt, turmeric powder, lemon juice and 3 cups water and mix well.Add stuffed green olives and mix. Slice lemon into thin slices, remove seeds and add to the pan.
