Ingredients list for Soya Nugget Do Piaza

  • 1 cup Soya nuggets , soaked for 30 minutes, drained and squeezed
  • 3 medium Onions
  • 15-20 Shallots
  • 4 tablespoons Oil
  • 1 tablespoon Ginger , chopped
  • 1 tablespoon Garlic , chopped
  • 1 tablespoon Coriander powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 130 grams Bhuna masala
  • a few sprigs Fresh coriander leaves
  • 2 tablespoons Fresh cream

Method

  1. Heat 2 tbsps oil in a deep non-stick pan and 2 tbsps oil in a shallow non-stick pan. Halve onions and cut each half into 4 pieces.
  2. Add shallots to shallow pan, cover and cook.
  3. Add the onion pieces to the deep pan and toss. Add ginger and garlic, mix and saute till lightly coloured.
  4. Add soya nuggets, coriander powder, turmeric powder and red chilli powder and mix well. Add bhuna masala and 2-3 tbsps water and mix well.
  5. When the shallots in the other pan turn a light brown, switch the heat off.
  6. Add salt to the soya nuggets and mix well.
  7. Chop coriander leaves and add and mix well. Cover and cook for 3-4 minutes. Add cream and mix.
  8. Transfer into a serving dish, put the shallots on top and serve hot.
