But do you know, the basic masala of the achar can also be used to make various other preparations for maincourse and other courses. Try making an unusual pickle like Bhindi ka Achar, then make a rice preparation like Achari Chana Pulao and end with an Achari Baingan. Shopping list 1 bottle pickle 200 grams chickpeas 1 packet Basmati rice 200 grams lady finger 1 packet dried mango powder 1 packet black salt 1 bottle mustard oil 100 grams split mustard seeds ½ kg baby brinjals 50 grams dried fenugreek seeds 50 grams onion seeds For faster preparation Boil chickpeas and reserve the water in which it is cooked. Cut tomatoes in wedges and chop coriander. Cut the brinjals, coarsely grind the mustard seeds, fenugreek seeds, fennel seeds, cumin seeds and onion seeds. Toss the brinjals in the coarsely ground mixture, salt and turmeric powder for the baingan preparation. Make fenugreek powder and deep fry the bhindi for the pickle. How to go about it Sauté onions till translucent for the pulao. Add whole garam masala, spices, chana, cooking liquor and rice and cover cook till rice is done. Toss bhindi with spices and masalas.
