Apple and Cranberry Compote A delicious relish – apples and cranberries cooked with orange rind and port wine. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 10 Aug 2015 in Recipes Course New Update Main Ingredients Apples, Cranberries Cuisine Fusion Course Pickles, Jams and Chutneys Prep Time 6-10 minutes Cook time 41-50 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Advertisment Ingredients list for Apple and Cranberry Compote 2 medium Apples cored, peeled and sliced 2 cups Cranberries dried 150 grams Castor sugar (caster sugar) 2 Star anise 4 Green cardamom pods, crushed to taste Salt to taste Black pepper powder 1 cup Port wine 1 medium Orange 1 cup Orange juice Method Advertisment Put sugar in a non-stick pan, add star anise and cardamoms and cook till the sugar caramelizes. Add cranberries and mix well and cook till soft. Add apples, mix well and cook for two to three minutes. Add salt and pepper powder and mix well. Add port wine, mix well and cook for five to ten minutes. Grate rind of entire orange into the pan. Add orange juice, mix well and cook till the mixture thickens. Transfer the compote into an airtight container and use as required within seven days.
