Ingredients list for Apple and Cranberry Compote

  • 2 medium Apples cored, peeled and sliced
  • 2 cups Cranberries dried
  • 150 grams Castor sugar (caster sugar)
  • 2 Star anise
  • 4 Green cardamom pods, crushed
  • to taste Salt
  • to taste Black pepper powder
  • 1 cup Port wine
  • 1 medium Orange
  • 1 cup Orange juice

Method

  1. Put sugar in a non-stick pan, add star anise and cardamoms and cook till the sugar caramelizes.
  2. Add cranberries and mix well and cook till soft.
  3. Add apples, mix well and cook for two to three minutes. Add salt and pepper powder and mix well.
  4. Add port wine, mix well and cook for five to ten minutes.
  5. Grate rind of entire orange into the pan. Add orange juice, mix well and cook till the mixture thickens.
  6. Transfer the compote into an airtight container and use as required within seven days.
