By Sanjeev Kapoor 06 Nov 2019 in Recipes Course New Update Main Ingredients Beetroot, Walnuts Cuisine Indian Course Raitas Prep Time 1-1.30 hour Cook time 6-10 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients 2 tablespoons beetroot puree 16-20 walnuts 1 cup yogurt 1 teaspoon red chili powder 1 teaspoon roasted cumin powder Salt to taste 6-8 fresh mint leaves Fresh mint sprig to garnish Method Heat sufficient water in a non-stick pan, add walnuts and blanch them. Remove from heat, drain, cool and chop roughly. Mix together yogurt, beetroot puree, walnuts, chilli powder, cumin powder and salt in a bowl. Add mint leaves, mix well and refrigerate to chill.
