Ingredients 

  • 2 tablespoons beetroot puree
  • 16-20 walnuts
  • 1 cup yogurt
  • 1 teaspoon red chili powder
  • 1 teaspoon roasted cumin powder
  • Salt to taste
  • 6-8 fresh mint leaves
  • Fresh mint sprig to garnish

Method

  1. Heat sufficient water in a non-stick pan, add walnuts and blanch them. Remove from heat, drain, cool and chop roughly.
  2. Mix together yogurt, beetroot puree, walnuts, chilli powder, cumin powder and salt in a bowl.
  3. Add mint leaves, mix well and refrigerate to chill.
  4. Transfer into a serving bowl, garnish with mint sprig and serve chilled.
