Ingredients list for Chicken Schezwan Momos - SK Khazana

  • 150 grams Chicken mince
  • 200 grams Refined flour dough
  • 2 tablespoons Oil
  • 1 teaspoon Ginger finely chopped
  • 1 1/2 tablespoons Garlic finely chopped
  • 1 tablespoon Celery finely chopped
  • 1 1/2 tablespoons Red chilli paste
  • to taste Salt
  • to taste White pepper powder
  • 1/2 teaspoon Vinegar
  • 2-3 Green chillies chopepd
  • 2 tablespoons Spring onion greens chopped
  • 1 tablespoon Light soy sauce
  • 1 tablespoon Tomato ketchup
  • for dusting Refined flour
  • to serve Sesame soy sauce

Method

  1. Heat oil in a non-stick pan. Add ginger, garlic and celery, mix and sauté till fragrant.
  2. Add chilli paste, mix well and sauté for a minute. Add ¼ cup water, stir and cook till the oil separates.
  3. Add salt and pepper powder and mix. Add vinegar, mix well and remove from heat.
  4. Mix together chicken mince, green chillies, 2 tablespoons prepared sauce, spring onion greens, soy sauce and tomato ketchup in a bowl.
  5. Dust worktop with some flour, place dough on it and roll out into a large thin disc. Use a medium size cookie cutter to cut out roundels from it.
  6. Place a portion of chicken mixture in the centre of each roundel, bring the edges together and shape into momos.
  7. Heat sufficient water in the lower compartment of a steamer. Place the momos in the perforated compartment over it, cover with a lid and steam for 10-15 minutes.
  8. Serve hot with sesame-soy dip.
