Ingredients list for Chola Fali Fafda

  • 1 1/2 cups Chola fali atta
  • 2 teaspoons Papad khar
  • to taste Salt
  • 1 tablespo Oil
  • 1 tablespoon Gram flour (besan)
  • 1/2 teaspoon Mustard seeds
  • 2 Green chillies
  • 5-6 Curry leaves
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Sugar
  • 1 teaspoon Lemon juice
  • 1 1/2 teaspoons Red chilli powder
  • 1 teaspoon Black salt (kala namak)

Method

  1. Combine chola fali atta, 3 tablespoons hot water, papad khar and salt in a bowl. Mix and knead well into a hard dough using more hot water if required. Set aside for 15 minutes. Place the dough on a hard base and pound it for 3-4 minutes and set aside again for 10 minutes.
  2. Divide the dough into medium equal portions and roll out into thin rotis.
  3. Heat 1 tablespoon oil in a non-stick pan.
  4. Combine gram flour and ½ cup water in a bowl and mix well. Ensure that there are no lumps.
  5. Add mustard seeds in the pan and let them splutter. Add green chillies and curry leaves and sauté well.
  6. Add dissolved gram flour and mix well. Add turmeric powder, salt, sugar, lemon juice and 1 teaspoon red chilli powder. Mix well and set aside.
  7. Make horizontal cuts on rotis and then cut into half. These are fafdas.
  8. Heat sufficient oil in a kadai. Deep-fry fafdas till golden. Drain on absorbent paper.
  9. Combine remaining red chilli powder and black salt in a bowl and mix well.
  10. Sprinkle chilli powder-black salt mixture on fafdas and serve with cooked gram flour mixture.
