By Sanjeev Kapoor 14 Nov 2016 in Recipes Course New Update Main Ingredients Corn meal (makaikaatta), Whole wheat flour (atta) Cuisine Fusion Course Breads Prep Time 0-5 minutes Cook time 2-2.30 hour Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Corn Bread 1 cup Corn meal (makaikaatta) 1 cup Whole wheat flour (atta) 1/4 cup Castor sugar (caster sugar) 1 tablespoon Baking powder 1/2 teaspoon Baking soda 1 teaspoon Salt 1 Egg 1 cup Buttermilk Olive oil ¼ cup + 1 tablespoon + for greasing and grilling 2 teaspoons Honey Method Preheat the oven to 180°C. Grease a loaf tin with olive oil. Put corn meal, wheat flour, castor sugar, baking powder, baking soda and salt in a bowl and mix well. Whisk together egg, buttermilk and one fourth cup and one tablespoon olive oil till in another bowl till well combined. Add this to the corn meal mixture and foldin gently. Do not over mix. Pour the batter in the prepared tin and spread evenly. Put the tin in the preheated oven and bake for twenty to twenty-five minutes. Remove from oven, brush with honey and set aside to cool. Cut into slices. Heat some olive oil in a non-stick pan. Place the corn bread slices on it and grill till grill marks appear on both sides. Serve immediately.
