Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Crunchy Coconut Chicken Recipe

  • Boneless chicken cut into 1½ inch strips 250 grams

  • Scraped coconut ½ cup

  • Oil for deep-frying

  • Bread crumbs dried ¾ cup

  • Red chilli flakes 1 teaspoon

  • Ginger finely chopped 1 inch

  • Curry leaves finely chopped 4-6

  • Fresh coriander leaves 2-3 tablespoons

  • Crushed black peppercorns to taste

  • Salt to taste

  • Cornflour/ corn starch 1 tablespoon

  • Egg 1

Method

Step 1

Heat sufficient oil in a pan.

Step 2

Put breadcrumbs, chili flakes, ginger, curry leaves, coriander leaves, coconut, salt and crushed peppercorns in a bowl and mix well. Add cornflour and mix well. Spread this mixture on a plate.

Step 3

Take chicken in a bowl. Add crushed peppercorns, salt and egg and mix well.

Step 4

Coat the chicken strips with breadcrumb mixture and place them on a plate.

Step 5

Deep-fry in hot oil till golden and crisp. Drain on absorbent paper.

Step 6

Serve hot with tomato ketchup.
