When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for FIERY PEPPER CHICKEN - skk Recipe

  • Boneless chicken cut into cubes 250 grams

  • Dried red chillies chopped 2

  • Black peppercorns crushed 3/4 teaspoon

  • Sesame oil 2 tablespoons

  • Salt to taste

  • Garlic chopped 1 1/2 tablespoons

  • Ginger chopped 2 teaspoons

  • Spring onion with green chopped 1

  • Dark soy sauce 2 teaspoons

  • Light soy sauce 2 teaspoons

  • Sugar 1/2 teaspoon

  • Cornflour slurry 3 tablespoons

  • Vinegar 1 teaspoon

  • Spring onion greens chopped to garnish


Step 1

Heat 1 tbsp sesame oil in a non-stick wok, add chicken, salt and crushed black peppercorns, mix and sauté on high heat for 2-3 minutes. Transfer into a bowl.

Step 2

Heat remaining sesame oil in the same non-stick pan, add garlic and ginger, mix and sauté till the raw flavours disappear.

Step 3

Add dried red chillies and spring onion with greens, mix and sauté for 1 minute. Add the chicken, mix well and sauté and cook for 2 minutes.

Step 4

Add dark soy sauce, light soy sauce and sugar, mix well and cook for 1 minute.

Step 5

Add cornflour slurry, mix well and cook till the sauce thickens and coats the chicken well. Add vinegar and mix well.

Step 6

Transfer into a serving dish, garnish with spring onion greens and serve hot.
