Fish with Roasted Pepper and Coriander Dressing

Grilled fish served with an extremely flavourful roasted red capsicum and coriander dressing. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Fish with Roasted Pepper and Coriander Dressing

  • 600 grams Fish Fillets boneless, cut into 3 inch pieces
  • 1 large Red capsicum roasted, peeled and diced
  • ¼ cup Fresh coriander leaves chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 6-8 Garlic cloves chopped
  • 2 tablespoons Fresh parsley chopped
  • 1 teaspoon Red chilli flakes

Method

  1. Place fish pieces on a plate. Sprinkle salt, crushed peppercorns and 1 tablespoon lemon juice and spread evenly on the pieces. Set aside for 10-15 minutes.
  2. To make the dressing, heat 2 tablespoons olive oil in a non-stick pan. Add garlic and sauté for 2 minutes.
  3. Add capsicum, coriander leaves, parsley, chilli flakes, salt and crushed peppercorns, mix well and sauté for 1 minute. Add remaining lemon juice and remove from heat. Set aside.
  4. Heat the remaining oil in a non-stick grill pan. Place the marinated fish pieces on it and cook for 2 minutes on each side.
  5. Serve hot with the prepared dressing.
