Fresh Carrot Pasta Dough

Carrot puree added to the flour gives the pasta a wonderful colour. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Fresh Carrot Pasta Dough

  • as required Carrot puree
  • 100 grams + for dusting Refined flour (maida)
  • to taste Salt
  • 1 tablespoon Olive oil

Method

  1. Put flour, salt, olive oil and some carrot puree in a bowl and mix well.
  2. Transfer the dough on the worktop, dust some flour and knead into a stiff dough. Transfer in a bowl, cover with cling film and set aside for 20-25 minutes.
  3. Use as required.
