By Sanjeev Kapoor 19 Jul 2020 in Recipes Course New Update Advertisment Main Ingredients Cluster beans ( Gavar), Oil Cuisine Gujarati Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Gavar Dhokli Nu Shaak - SK Khazana 150 grams Cluster beans ( Gavar) cut into 1 inch pieces 1 tablespoon Oil 1 teaspoon Mustard seeds 1 teaspoon Turmeric powder 2 teaspoons Red chilli powder 1 1/2 teaspoons Coriander powder 1 teaspoon Cumin powder to taste Salt 2 teaspoons Sugar 1/2 teaspoon Carom seeds 1 tablespoon Coriander leaves chopped to serve Rotis Dhokli dough 3/4 cup Gram flour ( besan) 2 tablespoons Whole wheat flour 1/2 teaspoon Turmeric powder 1/2 teaspoon Coriander powder 1/2 teaspoon Cumin powder to taste Salt 1 teaspoon Red chilli powder 1/2 teaspoon Baking soda 1 tablespoon Oil Method To make dhokli dough, take gram flour in a bowl, add whole wheat flour, turmeric powder, coriander powder, cumin powder, salt, Tata Sampann Chilli Powder, baking soda and oil and mix well. Add little water at a time and knead into semi-soft dough. Divide the dough into 1 inch cylinders and keep them on a plate. . Heat oil in a non-stick pressure cooker, add mustard seeds and let them splutter. Take cluster beans in a bowl and add water in it. Add asafoetida in the cooker. Drain and add the cluster beans, , ½ tsp turmeric powder, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, salt and sugar. Crush carom seeds and add. Add the dhoklis and add 1 cup water. Place the lid on the cooker and cook under pressure till 2-3 whistles are released. Allow the pressure to settle completely. Open the pressure cooker and add ½ cup water, remaining turmeric powder, remaining coriander powder, remaining chilli powder and adjust salt, mix well and cook for 2-3 minutes on low heat. Add coriander leaves and mix well. Take it off the heat.
