By Sanjeev Kapoor 04 Apr 2015 in Recipes Course New Update Main Ingredients Arborio Rice, Fresh Thyme Cuisine Italian Course Rice Prep Time 26-30 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Herb Risotto 2 cups Arborio Rice 1 teaspoon Fresh Thyme chopped 1 tablespoon Rosemary chopped 3 tablespoons Extra virgin olive oil 1 medium Onion finely chopped 2 cloves Garlic finely chopped 1/2 cup White wine 4 1/2 cups Vegetable stock 1 tablespoon Butter 3 tablespoons Parmesan cheese shavings to taste Salt 1 tablespoon Parsley chopped for garnish Basil leaves Method Heat two tablespoons of olive oil in a non-stick pan. Add onion and garlic and sauté till the onion turns translucent. Add thyme and rosemary, mix well and sauté for a minute. Add rice and sauté for a minute. Add white wine and mix. Add vegetable stock gradually and mix. Cook till the rice gets cooked and all the stock evaporates. Add butter, Parmesan cheese and remaining olive oil and mix well. Remove from heat and add parsley and mix well.
