Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Kadhi Bhel Recipe

  • Mixed Bhel 1 cup

  • Yogurt 2 cups

  • Salt to taste

  • Gram flour (besan) 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Sugar 1/2 teaspoon

  • Dried ginger powder (soonth) 1 teaspoon

  • Ghee 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Green chillies finely chopped 2

  • Curry leaves 4-5

  • Chopped fresh coriander leaves for garnishing


Step 1

Heat yogurt in a non-stick pan. Add salt, a little water and gram flour and blend well with a hand blender.

Step 2

Add turmeric powder, sugar and dried ginger powder, mix well and bring to a boil. Remove from heat.

Step 3

Heat ghee in another non-stick pan and add cumin seeds. When they change colour, add green chillies and curry leaves and sauté for half a minute. Pour this tempering into the yogurt mixture and mix well. Cool down to room temperature.

Step 4

Put bhel in a serving dish, pour the kadhi on top, garnish with coriander leaves and serve immediately.
