Add baking powder and beat again. Squeeze the grated potatoes and add to the eggs. Heat oil in a non stick pan, pour 2 ladle full of egg mixture and cook on medium heat. Chop parsley finely and sprinkle over the eggs and press gently.Cook till the underside turns a light golden. Flip over and cook till the other side gets similarly cooked.
