Ingredients for MANGO PANCAKES Recipe

  • Ripe Alphonso mango puree 3 tablespoons

  • Refined flour 1 cup

  • Baking powder 1/2 teaspoon

  • Sugar 2 teaspoons

  • Milk as required

  • Apples chopped 2 tablespoons

  • Ripe bananas sliced 2 tablespoons

  • Kiwis chopped 2 tablespoons

  • Fresh pomegranate pears 2 tablespoons

  • Black grapes 10-12 to garnish

  • Mango juice 3-4 tablespoons

  • Butter for greasing

  • Whipped cream as required

  • Ripe Alphonso mango chopped to garnish

  • Fresh mint leaves to garnish

Method

Step 1

Sift together flour and baking powder into a bowl. Add sugar and Alphonso mango puree and whisk well. Add sufficient milk and whisk to a semi-thick batter.

Step 2

Heat a non-stick pan. Add apple, banana, kiwi, pomegranate, black grapes and mango juice, mix and cook till the fruits and berries soften. Transfer into a bowl.

Step 3

Heat another non-stick pan and grease with some butter. Pour a ladleful of batter and spread to make a semi-thick disc and cook till the underside turns a light golden brown. Put some cooked fruit mixture in the center, fold and remove from heat. Make more pancakes in the same way.

Step 4

Place the pancake on one side of a serving platter. Pipe out some whipped cream on the other side and garnish it with some chopped Alphonso mango, black grapes and mint leaves and serve.
