Add salt, crushed peppercorns, cornflour and egg and mix well. Set aside. Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden brown. Drain on absorbent paper. Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and celery, mix and sauté for a minute. Add spring onion bulbs and red chillies and mix. Add soy sauce and oyster sauce, mix well and cook for a minute. Add stock, stir and bring to a boil. Add mango puree and mix well. Add salt and crushed peppercorns, mix well and cook for a minute. Add slurry, mix and cook till the sauce thickens. Add fried chicken pieces, mix well and simmer for a minute. Add spring onion greens and mix well.
