History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Matra Chaat - SK Khazana Recipe

  • Yellow dried peas (matra) soaked overnight 1 cup

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Medium onion chopped 1

  • Green chillies chopped 2

  • Lemon juice 1 tablespoon

  • Black pepper powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Black salt to taste

  • Dried mango powder 1/2 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Drain the yellow dried peas and put into a pressure cooker, add salt, turmeric powder and 2 cups water and cook under pressure till 5 whistles are given out.

Step 2

Place the cooked peas in a bowl, add onion, green chillies, lemon juice, pepper powder, red chilli powder, black salt, dried mango powder and roasted cumin powder. Mix well.

Step 3

Transfer into 4 serving bowls, garnish with coriander leaves and serve hot.
