How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Prep Time : 26-30 minutes

Cook time : 16-20 minutes

Serve : 4

Ingredients for Naikulu Recipe

  • Basmati rice 1 1/2 cups

  • Ghee 1/2 cup

  • Cinnamon 1 inch piece

  • Cloves 4

  • Green cardamoms 6

  • Onions,sliced 2 medium

  • Garlic,sliced 10-12 cloves

  • Cashewnuts 1/4 cup

  • Raisins 1/4 cup

  • Salt to taste

  • Sugar 2 teaspoon

Method

Step 1

Soak rice in three cups of water for twenty minutes. Drain and set aside.

Step 2

Heat ghee in a pan, add cinnamon, cloves and green cardamoms and sauté on medium heat.

Step 3

Add onions and garlic and sauté for another two minutes. Add cashewnuts and raisins and sauté for another minute.

Step 4

Add drained rice and mix well. Add salt and sugar and three cups of water.

Step 5

Cover and cook till the rice is done. Serve as an accompaniment with any curry.
