Ingredients list for Orange Marmalade Cake

  • 1/4 cup Orange Marmalade
  • 2 cups Refined Flour
  • a few drops Orange essence
  • 1/4 teaspoon Candied orange peel chopped
  • 1 teaspoon Baking powder
  • 2 cups Butter
  • 2 cups Castor sugar (caster sugar)
  • 5 Eggs

Method

  1. Preheat oven to 180°C. Sieve together refined flour and baking powder into a bowl.
  2. Cream butter and sugar till light fluffy. Gradually add eggs, two to three at a time, till the mixture is light.
  3. Add orange essence and mix well.
  4. Fold in the refined flour mixture. Add the candied orange peel and mix well.
  5. Grease a mould and pour the batter into it. Place the mould in the preheated oven and bake at for twenty to twenty-five minutes.
  6. Remove the cake from the oven and cool.
  7. Spread orange marmalade on top of the cake and serve.
