Ingredients list for Parval and Pumpkin Subzi

  • 1 cup Pumpkin cut into ½ inch cubes
  • 1 cup Parvals cut into ½ inch cubes
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 small Onion chopped
  • 1/2 teaspoon Sugar
  • 1 teaspoon Coriander powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Green chilli chopped
  • 1/2 teaspoon Ginger chopped
  • 1 small Tomato chopped
  • to taste Salt
  • 2 tablespoons coriander leaves chopped

Method

  1. Heat oil in a non stick add cumin seeds, when it starts spluttering add onions and saute till light brown.
  2. Add sugar,coriander powder, turmeric powder, green chillies, ginger and saute for a minute.
  3. Add tomatoes and saute till oil surfaces.
  4. Add pumpkin and parwar and half cup water and cook till vegetables are tender.
  5. Add salt and coriander and cook for a minute.
  6. Serve hot.
