Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Pesto Mushrooms Recipe

  • Button mushrooms stems removed 16-20 large

  • Basil leaves 1/2 cup

  • Garlic 5-6 cloves

  • Pine nuts(chilgoza) 1/4 cup

  • Salt to taste

  • Black peppercorns 5-6

  • Parmesan cheese 25 grams for garnish

  • Fresh cream 1/4 cup

  • Red capsicum 1 medium

Method

Step 1

Halve mushrooms. Heat 2 tbsps extra virgin olive oil in a non stick pan, add mushrooms and cook, tossing them occasionally for even cooking.

Step 2

To make the pesto, grind together basil leaves, garlic, pine nuts, salt, peppercorns, parmesan cheese and 4 tbsps extra virgin olive oil to a smooth paste.

Step 3

Add fresh cream to the mushrooms and cook. Chop red capsicum into ¼ inch pieces. Add pesto to the mushrooms and mix. Adjust salt. Add red capsicum and mix. Serve hot garnished with a few slices of Parmesan cheese.
