Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Plum Chilli Roast Chicken Recipe

  • Chicken 1 tablespoon

  • Plum jam seeded 5-6

  • Chicken whole with skin 1

  • Sea salt to taste

  • Ginger 1 inch piece

  • Garlic 7-8 clove

  • Carrot cut into large piece 8 medium

  • Potato cut into large piece 8 medium

  • Butter 1 tablespoon

  • Oil 2 tablespoon

Method

Step 1

Rub the sea salt inside and all over the outside of the chicken. Grind red chillies with ginger and garlic to a fine paste. Rub this paste inside and all over the outside of the chicken. Let it marinate for fifteen minutes to half an hour.

Step 2

Preheat the oven or broiler to 180°C.

Step 3

Keep the potatoes and carrots in the boiler. Place the chicken over the vegetables and cook for about forty five minutes. If cooking in a normal oven, layer the potatoes and carrots in a baking tray, place the chicken over them and cook.

Step 4

Mix way through drizzle some oil and brush with a little butter and continue to cook till the chicken is fully cooked. Mix plum jam with a little of the remaining chilli paste and spread over the chicken. Sprinkle a little sea salt over the vegetables.

Step 5

Cut the chicken into bite size pieces and serve hot with the vegetables.
