You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Poached Egg and Avocado Burger Recipe

  • Eggs 4

  • Medium avocado 1

  • Burger buns 4

  • Salt to taste

  • Vinegar as required

  • Lemon juice extracted 1

  • Iceberg lettuce leaves as required

  • Mayonnaise as required

  • Black pepper powder to taste

  • Tomato slices to serve

Method

Step 1

To poach an egg boil sufficient water in a non-stick pan, break egg into a silicon mould, sprinkle salt and ¼ teaspoon vinegar over it, place the mould in the boiling water and let the egg poach.

Step 2

Alternately, boil sufficient water in a non-stick pan, add vinegar and mix. Break an egg in a silicon mould, sprinkle some salt over it, slide the egg slowly into the pan, cover and let it poach. Similarly poach the remaining 2 eggs.

Step 3

Halve the avocado, peel and cut into thin slices. Place the slices on a plate, squeeze the juice of a lemon over the slices and sprinkle some salt.

Step 4

Halve the burger buns horizontally. Tear lettuce leaves and place some on the base half of each bun. Drizzle some mayonnaise over and place some avocado slices.

Step 5

Top with 1 poached egg, sprinkle some pepper powder over the egg, place some avocado slices and sprinkle salt over them. Cover with the top part of the buns and serve immediately with tomato slices and a few lettuce leaves.
