Ingredients list for Potato Dosa

  • 2 medium Potatoes , boiled and peeled
  • 1 cup Semolina (rawa / suji)
  • 1/2 cup Rice flour
  • 1/4 cup Refined flour (maida)
  • 6 Cashewnuts , crushed
  • to taste Salt
  • to taste Black peppercorns , crushed
  • 1/2 inch Ginger , chopped
  • 2 Green chillies , chopped
  • 1 tablespoon Fresh coriander leaves, , chopped
  • to cook Ghee
  • to serve Green coconut chutney
  • to serve Sambhar

Method

  1. Roughly chop the potatoes and transfer into a blender jar and grind into a fine paste.
  2. Transfer into a mixing bowl, add semolina, rice flour, refined flour, cashewnuts, salt, crushed black peppercorns, ginger, green chillies, coriander leaves and 4 cups water and whisk thoroughly to a thin batter. Set aside for 15 minutes.
  3. Heat a non-stick tawa and pour a ladle of batter on it and spread thinly. Drizzle ghee on top and cook till it turns brown and crisp.
  4. Fold the dosa and serve hot with coconut chutney and sambhar. Make more dosas with the remaining batter.
