By Sanjeev Kapoor 20 Jul 2020 in Recipes Course New Update Advertisment Main Ingredients Urad dal, Sugar Cuisine Bengali Course Desserts Prep Time 4-5 hour Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Rosh Bora - SK Khazana 1 cup Urad dal 1 cup Sugar 2 teaspoons Fennel seeds 8-10 Black peppercorns 8 Green cardamoms A pinch of salt Oil for deep frying Slivered almonds for sprinkling Slivered pistachios for sprinkling Method Take urad dal in a bowl, wash it well and soak in sufficient water for 3-4 hours. Put fennel seeds in a mortar, add black peppercorns and3 green cardamoms and pound them with a pestle into a coarse powder. Transfer the soaked and drained urad dal into a blender jar, add a little salt and a little water and blend to a thick and fine paste. Transfer into a bowl and beat till the colour changes and the mixture becomes light. Heat sufficient oil in a kadai. Meanwhile, to make sugar syrup, heat a non-stick pan, add sugar and 1 cup water and let it cook. Add remaining green cardamoms and let the sugar melt completely and form a syrup. Switch off the heat. Add some of the coarsely ground spices to the urad dal paste and mix well. Drop in spoonful of the batter into the hot oil and deep-fry till golden and crisp. Drain on absorbent paper. Add the fried bodasto the sugar syrup,mix gently and let them soak for 15-20 minutes. Drain the bodas and place them on a serving plate.
