Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Sweet Corn Vegetable Soup-SK Khazana Recipe

  • Sweet corn kernels 1/2 cup

  • Corn style sweet corn 1/2 cup

  • Cabbage finely chopped 2 tablespoons

  • Carrot finely chopped 2 tablespoons

  • Oil 1 tablespoon

  • Vegetable stock 4-5 cups

  • Salt to taste

  • White pepper powder to taste

  • Sugar 1/2 teaspoon

  • Cornflour slurry 2 tablespoons

  • Spring onion greens chopped to garnish

Method

Step 1

Heat oil in a non-stick pan. Add corn kernels, cabbage and carrot, mix and sauté for 2 minutes. Add stock, stir and bring to a boil.

Step 2

Add cream style corn, mix and simmer for 1-2 minutes. Add salt, pepper powder and sugar and mix well.

Step 3

Add cornflour slurry, stir and cook till the soup thickens.

Step 4

Garnish with spring onion greens and serve piping hot.
