The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Ingredients for Upvasacha Dosa Recipe

  • Barnyard millet (samo) , soaked for 4-5 hours 1 cup

  • Sago (sabudana) , soaked for 4-5 hours 1/2 cup

  • Yogurt 1 cup

  • Rock salt (sendha namak) 1 teaspoon

  • Oil for drizzling

  • Coconut chutney to serve

Method

Step 1

Put soaked samo, soaked sabudana, yogurt, rock salt and ½ cup water in a mixer jar and grind to a fine mixture. Transfer this into a bowl and whisk well.

Step 2

Heat a non-stick tawa.

Step 3

Pour a ladleful of the batter and spread it in a clockwise motion to a thin dosa. Drizzle some oil all around and cook for 2-3 minutes. Fold in half and transfer it onto a serving plate. Make more dosas with the remaining batter.

Step 4

Serve hot with coconut chutney.
