Ingredients list for Walnut Raisin Cookies

  • 80 grams Walnuts toasted and chopped
  • 30 grams Raisins
  • 200 grams Refined flour (maida)
  • 110 grams Castor sugar (caster sugar)
  • 200 grams Butter diced
  • a pinch Salt
  • a few drops Vanilla essence
  • as required Egg wash

Method

  1. Preheat oven at 175°C. Cream together sugar and butter in cake batter mixer at a low speed till ingredients are well combined. Increase the speed and blend till the mixture is light and fluffy. Add salt and vanilla essence and blend for 4-5 minutes on medium speed.
  2. Add flour in batches and fold in using a spatula. Combine till all the flour is mixed with the butter-sugar mixture.Add raisins and walnuts and mix well.
  3. Place a piece of butter paper on a worktop and put a portion of the dough on it. Roll into a cylinder. Refrigerate for 2 hours.Brush the cookie dough cylinder with an egg wash and sprinkle sugar on it. Roll so that the dough is coated with the sugar.
  4. Cut the cylinder into medium thick roundels. These are the cookies. Place a butter paper on a baking tray and put the cookies on it. Spread egg wash on cookies. Put the baking tray in preheated oven and bake for 10-12 minutes. Remove from heat, cool and serve.
