Thai Raw Mango Salad

Ingredients

  • 2 medium raw mangoes, peeled, seeded and cut into thin strips
  • 1 tablespoon finely chopped garlic
  • 2 bird’s eye chillies, chopped
  • ½ lemon
  • ½ tablespoon fish sauce
  • Salt to taste
  • 2 teaspoons brown sugar
  • ½ medium yellow capsicum, cut into thin strips
  • ½ medium red capsicum, cut into thin strips
  • 1 small onion, thinly sliced
  • 2 tablespoons roasted salted peanuts
  • 1 small carrot, peeled and cut into thin strips
  • 4-5 fresh basil leaves, shredded
  • ½ cup bean sprouts

Method

  1. To make the dressing, take garlic in a bowl, add bird’s eye chillies and squeeze the juice of lemon. Add fish sauce, salt and brown sugar and mix well.
  2. Take raw mango in a large bowl, add yellow capsicum, red capsicum, onion, roasted salted peanuts, carrot, basil leaves and bean sprouts and mix well. Drizzle the dressing on it and mix well.
  3. Transfer into a serving bowl and serve.
